For this dish, I used a combination of baby spinach, kale and mustard greens in combination with some chopped radishes and avocado for texture and flavor. Finally, to give an extra punch of flavor I finished off the dish by topping it off with fresh basil leaves and lemon zest for an added zest of freshness – creating an irresistibly refreshing summery salad that pairs beautifully with any meal!

This delicious microgreen salad recipe offers both sweet and savory elements for optimal health. Cruciferous microgreens like broccoli, kale, kohlrabi and arugula contain high amounts of sulforaphane which has been proven to prevent cancer; while spinach and kale provide ample vitamins A, C and folate. Radishes and avocado add crunch while the sweet additions such as feta cheese pistachios and dried cranberries add both texture and sweetness.

At its heart, this salad requires no special equipment or kitchen tools to create it. All that’s required to prepare it is something to clean and dry the greens – such as a salad spinner or strainer – before placing them into the refrigerator until ready for consumption – just be sure not to toss with dressing until just before eating otherwise the microgreens will wilt quickly!
